I just wanted to take a second to tell you how much I appreciate your gluten free carrot cake.  As someone with Celiac Disease, baked goods (especially Good ones) are few and far between. 

Walking into a coffee shop in Asheville and being able to buy a piece of delicious cake just like anyone else in the world made me so happy.  And your gluten free carrot cake tasted so good, that we bought a whole cake and had it decorated as our wedding cake!  I thank you so much for making these cakes and making them so well.
